Iced tea cocktail
Make a homemade iced tea with assam leaves for some cooling refreshment. If you prefer yours boozier, spike it with bourbon whiskey

Ingredients
- 1tbsp assam tea leaves
- 2tsp golden caster sugar
- 25ml bourbon whiskey (we like Woodford Reserve) , per person (optional)
- lemon wedges and a sprig of mint , to serve
Instructions
Step 1
Put two handfuls of ice in a heatproof jug. Put the tea leaves into a teapot and pour over 200ml of boiling water, steep for 30 seconds then strain into the ice-filled jug and add the golden caster sugar. Allow to cool completely, stirring occasionally.Step 2
Pour the cooled sweet tea into tall glasses with more ice, lemon wedges and a sprig of mint, if you like. To make a boozy version, add bourbon whiskey. As iced tea is relatively light, a little goes a long way.
