Sparkling wine gelée with red berries
A nice dessert to end a beautiful evening... Don't forget to drink the rest of the sparkling wine!
- Sparkling wine jelly
- 125g sparkling wine
- 20g sugar
- 1g agar agar
- 1pc jelly leave
- Dessert topping
- 100g raspbery
- 100g blueberry
- 100g blackberry
- 2scoops of raspberry sorbet
- 50g of raspberry coulis
- 1small glass of sparkling wine
- Edible flowers
- A parfait or coupe glass for serving
Step 1Sparkling wine jelly
Step 2Soak the gelatin sheet in a glass of water.
Step 3Heat half of the sparkling wine, mix agar agar and sugar. Add this to the sparkling wine and bring to the boil. Remove from the heat, add the gelatin sheet, and pour the rest of the sparkling wine.
Step 4Pour into a thin plate and leave to set in the fridge for 1 hour, then cut into very small cubes. Delicately remove from tray with a small spoon.
Step 5Dessert topping
Step 6Cut 3/4 of the berries in two, add a spoon of coulis and mix together with a spoon.
Step 7In a glass, add a scoop of raspebrry sorbet, add the red fruit salad around, the coulis, and add the jelly. Finish with some uncut red fruit, a bit sparkling wine and flowers.
