This recipe will make more spiced gin than you need but it will keep indefinitely – enough for many more spiced negronis, or trying mixing with aromatic tonic water

  1. Step 1

    To make the spiced gin, put the spices, bay leaves, orange peel and the gin into a clean mason jar and leave for 24-36 hrs to infuse, then strain out the spices.
  2. Step 2

    Pour 25ml each of spiced gin, Campari and vermouth into a chunky, heavy-bottomed tumbler filled with ice. Garnish with a star anise, cinnamon stick and orange twist or wedge
