Recipe Tip: Falafel Aboudis Style

- 250 gChickpeas, dried
- ½onion, roughly chopped
- 2garlic cloves
- ½ bunch(es)Parsley
- ¼ bunch(es)Coriander
- 1lemon (juice)
- ½ teaspoon(s)baking powder
- ½ tablespoonCoriander seeds, ground
- ½ tablespooncumin, ground
- oil to brush
Step 1Place the chickpeas in a bowl, cover completely with water and soak for 24 hours.
Step 2Drain the water off. Mix the drained chickpeas together with the onion, garlic, parsley and coriander through the finest slice of a meat grinder.
Step 3Add lemon juice and baking powder.
Step 4Season very generously with salt, pepper, add the ground coriander seeds and ground cumin and knead everything well.
Step 5Roll the dough into small balls about 3-4 cm in diameter, brush generously with oil, place on a baking tray lined with baking paper and bake in the oven at 200 °C for about 20 minutes until the falafel are lightly browned and crispy. Turn once after 10 minutes!
