Recipe Tip: Falafel Aboudis Style

- 250 gChickpeas, dried
- ½onion, roughly chopped
- 2garlic cloves
- ½ bunch(es)Parsley
- ¼ bunch(es)Coriander
- 1lemon (juice)
- ½ teaspoon(s)baking powder
- ½ tablespoonCoriander seeds, ground
- ½ tablespooncumin, ground
- salt
- pepper
- oil to brush
Instructions
Step 1
Place the chickpeas in a bowl, cover completely with water and soak for 24 hours.Step 2
Drain the water off. Mix the drained chickpeas together with the onion, garlic, parsley and coriander through the finest slice of a meat grinder.Step 3
Add lemon juice and baking powder.Step 4
Season very generously with salt, pepper, add the ground coriander seeds and ground cumin and knead everything well.Step 5
Roll the dough into small balls about 3-4 cm in diameter, brush generously with oil, place on a baking tray lined with baking paper and bake in the oven at 200 °C for about 20 minutes until the falafel are lightly browned and crispy. Turn once after 10 minutes!Step 6
