Recipe Tip: Tacos with Braised Beef and Chocolate
Top Recipe for 8 Persons. All ingredients and tips for getting it right. Chocolate and chilli is a trademark Mexican combination and this dish shows just how beautifully the two ingredients combine. It has that deep, velvety glory that we all crave on damp, cold winter evenings.
- 3 kgquality shin of beef, bone-in, cut into large chunks
- 2 tablespoonolive oil
- 1large onion, finely chopped
- 6garlic cloves, finely chopped
- 3 tablespoonbrown sugar
- 2 tablespoonapple cider vinegar
- 3 tablespoonancho chilli powder
- 2 tablespoonground cumin
- ½ teaspoon(s)cayenne pepper (optional)
- 50 gquality dark chocolate (70% or more)
- 1 pinch(es)salt
- black pepper
- packcorn tortillas
- 1red onion, finely sliced
- 1 bunch(es)coriander, chopped
- 100 gjalapeño peppers, sliced
- 300 gricotta salata or sheep's cheese, crumbled
- 4limes, cut into wedges
Step 1Preheat the oven to 130°C.
Step 2Season the beef shin well with salt and pepper. Heat the oil in a large cast-iron pan (use one with a lid) over medium-high heat. Working in batches so as not to crowd the pan, sear the beef until well browned all over, 6–7 minutes per batch.
Step 3Remove the meat with a slotted spoon and set aside between batches.
Step 4When all the meat is cooked, add all the meat to the pan with the onion, garlic, and all the other ingredients except the chocolate. Pour in just enough water to halfway cover the meat.
Step 5Bring to the boil, cover with the lid and place in the oven. Leave to braise for 7–9 hours, preferably overnight.
Step 6Using a slotted spoon, remove the shin from the pan and set aside to cool. Put the pan on the hob over medium heat and cook, stirring, to reduce.
Step 7Add the chocolate in small pieces.
Step 8Remove the beef from the bone, pull into bite-sized strips with your hands and add to the sauce.
Step 9Crisp the tortillas in a hot pan according to the instructions on the packet.
Step 10To serve, put some of the braised beef on each tortilla, top with onion, coriander, jalapeño peppers and cheese and season with a squeeze of lime juice. Eat with your hands!
