Recipe Tip: Carrot Noodles with Coriander Pesto

- 1peeled garlic clove
- 2 bunch(es)coriander
- 50 gbread, cut into small cubes
- 100 mlolive oil
- juice from 1 lemon
- 1 pinch(es)black pepper
- 5large carrots
- 100 gsour cream
- 100 gbread cubes
Step 1Pluck leaves from coriandar stalks, discard stalks.
Step 2Blend together all ingredients with a hand blender. Season to taste.
Step 3Peel carrots. Cut wide noodles with a spiral cutter.
Step 4Bring a pot of salted water to a boil.
Step 5Cook carrot noodles for a few minutes until tender.
Step 6Toast bread cubes at 200°C fan bake until crispy.
Step 7Mix cooked noodles with pesto and sour cream. Sprinkle with the crispy croutons.
