Recipe Tip: Carrot Noodles with Coriander Pesto

Ingredients
- 1peeled garlic clove
- 2 bunch(es)coriander
- 50 gbread, cut into small cubes
- 100 mlolive oil
- salt
- juice from 1 lemon
- 1 pinch(es)black pepper
- 5large carrots
- salt
- 100 gsour cream
- 100 gbread cubes
Instructions
Step 1
Pluck leaves from coriandar stalks, discard stalks.Step 2
Blend together all ingredients with a hand blender. Season to taste.Step 3
Peel carrots. Cut wide noodles with a spiral cutter.Step 4
Bring a pot of salted water to a boil.Step 5
Cook carrot noodles for a few minutes until tender.Step 6
Toast bread cubes at 200°C fan bake until crispy.Step 7
Mix cooked noodles with pesto and sour cream. Sprinkle with the crispy croutons.Step 8
