Air-fryer salmon
This is a simple salmon supper for when you haven’t got the energy to cook. It can easily be scaled up to feed more people

Ingredients
- ½tbsp vegetable oil
- ½lemon , zested and juiced
- 20twists of black pepper
- 2skinless salmon fillets
- 5g dill , chopped

Step 1
Heat the air-fryer to 160C. Mix the vegetable oil, lemon, black pepper and salt in a small bowl. Line the air-fryer with some baking paper or a reusable liner, then lay the salmon in. Drizzle the oil over the salmon, then close the drawer.Step 2
Cook for 8-10 mins or until the salmon gently flakes and is cooked through, then remove using a fish slice. Sprinkle with the dill. Serve with crispy potatoes and seasonal veg for an easy midweek meal.
