Chocolate Berry Cheesecake
A mouth-watering fruity cheesecake ... sure to be a hit with all the family.

Ingredients
- 100g butter, melted
- 250g sweet plain chocolate biscuits*
- 425g can Wattie's Boysenerries in Syrup
- 500g pottle cream cheese
- 2tsp gelatin
- 100g caster sugar
Instructions
Step 1
Crush the biscuits in a food processor or by placing in a sealed plastic bag and crushing with a rolling pin. Stir in the melted butter. Press into the base and sides of a 23cm loose bottom deep dish flan tin. Refrigerate until required.Step 2
Drain the Wattie's Boysenberries in Syrup over a sieve, into a bowl, pressing the berries gently with the back of a spoon to release the excess syrup, and so they are slightly broken down, ready for mixing with the cream cheese. Reserve the collected syrup for the topping.Step 3
Beat together the drained and slightly crushed boysenberries with the cream cheese and caster sugar until smooth. Spread into the prepared flan, and refrigerate until required.Step 4
Sprinkle the gelatin over the reserved boysenberry juice and when it has been absorbed, warm in the microwave for 2 minutes on high and stir until dissolved. Cool to room temperature before pouring. Pour over the cheesecake filling and refrigerate for 2 hours before serving.
