Roasted strawberries
Roast strawberries in a red wine vinegar syrup, then serve with fresh mint and whipped cream for an imaginative twist on the classic British dessert

Ingredients
- 100g caster sugar
- 50ml red wine vinegar
- 2star anise
- 500g strawberries, hulled
- 300ml double cream
- 1tbsp icing sugar
- ½tsp vanilla extract
- a handful mint leaves
Instructions
Step 1
Heat the oven to 200C/fan 180C/gas 6. Put the sugar, vinegar, star anise and 50ml of water into a small pan and heat until the sugar dissolves. Bubble the mixture until syrupy.Step 2
Put the strawberries into a deep roasting tin and pour over the syrup. Roast for 10 minutes, toss, then roast for another 5 minutes, or until the strawberries have softened slightly and the syrup has reduced to a glaze. Leave to cool until just warm.Step 3
Put the cream, sugar and vanilla into a bowl and whisk to soft peaks.Step 4
Divide the strawberries between bowls, serve with the cream and tear over the mint leaves.
