Braised beef short ribs with star anise
These braised beef short ribs with star anise recipe is sweet, salty and packed with spoon-soft meat.

Ingredients
- 1dash of neutral oil
- 1onion, finely sliced
- saltto taste
- 6garlic cloves, grated to a paste
- 1knob ofginger, grated to a paste
- 1tspcoriander seeds
- ½tspcumin seeds
- 1tspfive-spice powder
- 800ml of beef stock, plus an extra 250ml for topping up if needed
- 4beef short ribs, about 1kg
- 2star anise
- 1tbsp ofdark soy sauce
- 2tbsp of rice wine vinegar
- ½tspground white pepper
- 100g ofprunes, (or use 2 tbsps honey)
- 1handful offresh mint leaves, chopped
- 1handful ofcoriander leaves, chopped
- 1mild red chilli, finely sliced
- 1spring onion, finely sliced
Instructions
Step 1
Preheat the oven to 170°C/gas mark 3Step 2
Place a lidded casserole dish large enough to hold the ribs over a medium heat, and add a dash of oil. Once the oil is hot, add the onion and a pinch of salt. Cook the onion over a medium heat until soft, 10-15 minutesStep 3
Add the garlic and ginger and cook, stirring, until fragrant and soft. This should be about a minute or soStep 4
Add the coriander seeds, cumin seeds and five spice then cook for another minute. Take care not to burn the spices and add another dash of oil if necessaryStep 5
Add the stock, followed by the short ribs, star anise, soy sauce, vinegar and some salt and the white pepper. Put the lid on and transfer to the oven for 3 hours, 30 minutes, or until the ribs are tender (the exact cooking time will vary depending on size and shape of the ribs)Step 6
After the ribs have been cooking for 2 hours 30 minutes, add the prunes and top up with more stock if neededStep 7
Serve the short ribs garnished with the herbs, red chilli and spring onion
