Baron Bigod with Sliced Comice Pear, Candied Walnuts and Almonds Recipe
These fast and simple canapés come together in less than 30 minutes: simple good sliced cheese paired with sweet Comice pears, crunchy caramelised walnuts and a touch of fragrant Marcona almonds. The whole dish is served on Carr's Caramelised Red Onion Melts, for a moreish and easy treat.
Ingredients
- 3 ½oz of cane sugar
- 1 ¾oz of walnuts
- 8 ¾oz of Baron Bigod
- 2Comice pears
- 3 ½oz of Marcona almonds
- 12Carr's Melts Caramelised Red Onion Crackers
Instructions
Step 1
Place sugar in a pan with a little water, and cook to 121°C | Ingredients: 3 1/2 oz of cane sugarStep 2
Add the walnuts and continue to cook until sugar crystallises and coats the walnuts. Transfer to a baking parchment-lined tray and carefully use a wooden spoon to separate the walnuts one another, then leave to cool | Ingredients: 1 3/4 oz of walnutsStep 3
Slice the cheese 0.5cm thick and layer on the biscuits | Ingredients: 8 3/4 oz of Baron Bigod , Carr's Melts Caramelised Red Onion Crackers, as neededStep 4
Slice the pear and layer it on top of the cheese | Ingredients: 2 Comice pearsStep 5
Crumble the candied walnuts on top of the pear | Ingredients: 3 1/2 oz of walnutsStep 6
