Beetroot vodka martini
A riff on a dirty vodka martini – this instead uses the juice from a jar of pickled beetroots, which gives a lovely pink colour and sweet, earthy balance.

Ingredients
- 60ml creamy vodka, such as Dima's
 - 1tbsp classic dry vermouth (we used Noilly Prat)
 - 1tbsp beetroot juice

Step 1
You can make it in the traditional way – put the vodka in a cocktail shaker with the vermouth and beetroot juice and a few cubes of ice, shake well and strain into a cocktail glass. Or, it works just as well simply pouring the ingredients into a tumbler over ice.
