- 1rabbit, whole, ready for cooking
- 1 kgonion, sliced
- 2 clove(s)garlic, peeled
- 150 mlolive oil
- 100 mlred wine
- 500 gripe tomatoes, chopped
- 5dried apricots
- 500 gbroad beans, precooked
- ½ tablespoontomato paste
- 2cinnamon sticks
- 2bay leaves
Step 1Joint the rabbit into 8 pieces and brown in a pot with olive oil.
Step 2Deglaze with red wine and add the onions.
Step 3Cover and let everything simmer for 40 minutes, until it is half cooked.
Step 4Add the chopped tomatoes, the tomato paste mixed in a little water, garlic, bay leaves, cinnamon sticks, cloves, salt and pepper and let it cook for another hour.
Step 5Ten minutes before the end, add the broad beans and apricots.
Step 6Serve with plenty of bread.
