Ingredients
- 1rabbit, whole, ready for cooking
- 1 kgonion, sliced
- 2 clove(s)garlic, peeled
- 150 mlolive oil
- 100 mlred wine
- 500 gripe tomatoes, chopped
- 5dried apricots
- 500 gbroad beans, precooked
- ½ tablespoontomato paste
- 2cinnamon sticks
- 5cloves
- 2bay leaves
- salt
- pepper
Instructions
Step 1
Joint the rabbit into 8 pieces and brown in a pot with olive oil.Step 2
Deglaze with red wine and add the onions.Step 3
Cover and let everything simmer for 40 minutes, until it is half cooked.Step 4
Add the chopped tomatoes, the tomato paste mixed in a little water, garlic, bay leaves, cinnamon sticks, cloves, salt and pepper and let it cook for another hour.Step 5
Ten minutes before the end, add the broad beans and apricots.Step 6
Serve with plenty of bread.
