Recipe Tip: Smoky Aubergines - Falstaff

Ingredients
- 100 mllight soy sauce (or Tamari sauce)
- 100 mlextra virgin olive oil
- 1 tablespoonred wine vinegar
- 1 tablespoonSichuan peppercorns (toasted and crushed)
- 1 tablespooncumin seeds (roasted and crushed)
- ½ bottleTabasco Chipotle sauce
- 3 clove(s)garlic, crushed
- 2 ½ cmginger, finely chopped
- 2 tablespoonsugar
- 3aubergines
- 1 tablespoonsea salt
- 200 mlolive oil
- 1 handfulcoriander leaves
- 1 tablespoonroasted sesame seeds
- 4spring onions, cut into fine rings
Instructions
Step 1
For the dressing, mix the olive oil, soy sauce, sugar and red wine vinegar in a bowl and pour over the toasted and crushed peppercorns and cumin.Step 2
Add Tabasco Chipotle Sauce, garlic and ginger and mix well. Cut the aubergines into 25cm thick slices and rub with olive oil and sea salt.Step 3
Sear the aubergine slices on both sides on the grill or in the pan, brushing them frequently with salt and olive oil, until they are a golden-brown colour and fully cooked.Step 4
Arrange on a plate and pour the dressing.Step 5
Sprinkle with fresh coriander, spring onion and sesame seeds.Step 6
