Pineapple and Lime Rum Punch with Spiced Citrus Sugar Recipe
This refreshing pineapple cocktail is finished with ginger ale and garnished with a whole bird's eye chilli. It comes together in a flash and has a fun spiced sugar decoration.
Ingredients
- 1orange, zested
- 1lemon, zested
- 3 ½oz of caster sugar
- ½tsp cayenne pepper
- 1pint of pineapple juice
- 4.063fl oz of white rum
- 2 ⅓fl oz of lime juice
- 1handful of ice cubes
- 5.063fl oz of ginger ale
- 1lime, cut into wedges
- 1handful of ice cubes
- 3bird's eye chillies
Instructions
Step 1
Begin by making the spiced citrus sugar. Add the orange and lemon zest to the 100g sugar, then rub the zest into the sugar until the zest is fragrant and begins to release its oils | Ingredients: 1 orange, zested , 1 lemon, zested , 3 1/2 oz of caster sugarStep 2
Mix in the cayenne pepper | Ingredients: 1/2 tsp cayenne pepperStep 3
Take a lime wedge and run it over one secion of the glass for the sugar to stick to | Ingredients: 1 lime, cut into wedgesStep 4
Press that section of the glass into the spiced citrus sugar, pressing more sugar in as needed to fill in any gapsStep 5
Use a piece of kitchen paper to neaten up the edges of the citrus sugar then begin the cocktail baseStep 6
For the punch, add the pineapple juice, white rum and lime juice to a cocktail shaker filled with ice. Shake well | Ingredients: 1 pint of pineapple juice , 4 1/16 fl oz of white rum , 2 1/3 fl oz of lime juice , 1 handful of ice cubesStep 7
Fill each of the glasses with ice, then divide the shaken pineapple base between each glass | Ingredients: 1 handful of ice cubesStep 8
