Recipe Tip: Vegetarian Summer Rolls
Top Recipe by Julian Kutos. All ingredients and tips for getting it right. The crowning glory of summer: summer rolls. Quickly rolled, filled with colourful vegetables, served with a tangy lime sauce.
- 20rice paper
- 1red bell pepper
- 100 gshiitake mushrooms
- 1mini cucumber
- fresh mint
- zest of 1 lime
- 80 mllime juice
- 50 gcane sugar
- 3 cmginger
- 1 ½ tablespoonrice vinegar
- 2 tablespoonsoy sauce
- 1 pinch(es)salt
- 1 pinch(es)black pepper
Step 1Roll the lime on a board to release the juice inside, first grate the lime zest of the whole lime, then cut and squeeze out the lime juice.
Step 2Peel and grate ginger.
Step 3Boil lime juice and zest with sugar and ginger in a pan. Simmer for a few minutes and then remove from heat.
Step 4Stir in the remaining ingredients.
Step 5Season with salt and pepper and leave to one side to continue to infuse.
Step 6Clean the vegetables and fruit (cucumber, pepper, mango, carrot and spring onion) and cut into thin strips with the same length and width where possible.
Step 7Marinate mushrooms with a little soy sauce. Soak the rice paper in water to soften. Place a mint leaf in the middle.
Step 8Put some vegetables, mango and mushrooms onto the rice paper.
Step 9Spread with a little lime and soy sauce. Carefully roll up.
Step 10Cut off excess rice paper and serve
