Guinness soda bread
This is a speedy homemade bread with wholemeal flour and oats, perfect slathered with salty butter. Stout and black treacle add caramely, earthy flavour

Ingredients
- 270g plain flour
- 250g wholemeal flour
- 150g jumbo oats , plus more for sprinkling
- 1tbsp bicarbonate of soda
- 2tsp sea salt flakes
- 250ml stout
- 250ml buttermilk
- 1tbsp black treacle
- salted butter , to serve
Instructions
Step 1
Heat the oven to 190C/170C fan/gas 5. Whisk the flours, oats, bicarb and salt in a large bowl. Pour the stout and buttermilk into a jug and whisk in the treacle, then pour into the bowl with the oats. Mix well with a wooden spoon until combined.Step 2
With heavily floured hands, shape the dough into a 20cm round and slide onto a lined baking tray. Flour the handle of a wooden spoon and, holding it horizontally, push to the bottom of the loaf to make a cross. Sprinkle with a handful of oats. Bake for 40-50 mins or until the loaf sounds hollow when tapped on the bottom. Leave to cool slightly.Step 3
Serve warm with plenty of salted butter.
