Use this crispy roasted cauliflower in curries, salads or as a side dish. It's simple to make, too – the oven does all the work
- Serves: 4 persons
- 1cauliflower, broken into florets, stem chopped
- 2tbsp olive oil
Step 1Heat the oven to 200C/fan 180C/gas 6. Tip the cauliflower into a large roasting tin, drizzle over the oil and season well.
Step 2Bake for 40 minutes until slightly charred and cooked through, tossing halfway. Add the roasted cauliflower to your favourite curry base, serve in wraps with sauces or add to grain salads with a punchy dressing.
