Champagne mojito
At Soho restaurant Bébé Bob, this classy cocktail is topped up with a champagne foam made in a cream whipper

Ingredients
- 4mint leaves
- 2drops of Angostura bitters
- 20ml rum
- 25ml lime juice
- 15ml sugar syrup (you can buy this or make it yourself)
- prosecco, to top up
Instructions
Step 1
Pour all the ingredients, except the prosecco, into a mixing glass or shaker, put the lid on and shake.Step 2
Double-strain into a champagne flute and top up with prosecco.
