Recipe Tip: Beetroot Carpaccio
Top Recipe for 4 Persons. All ingredients and tips for getting it right. Combined with creamy goat's cheese and spicy horseradish, the beetroot cuts a particularly fine figure.
- 500 gcooked beetroot
- 150 gcreamy goat's cheese
- 10grilled figs (see below)
- 1 handfulfreshly grated horseradish
- 3 tablespoonsweet soy sauce
- 3 tablespoonolive oil
- 100 mlolive oil
- 100 mlwhite wine vinegar
- beetroot juice
- 3 tablespoonsoy sauce
- 1 teaspoon(s)honey
- black pepper, freshly ground
- zest and juice of 1 lemon
Step 1For the dressing, mix all ingredients together.
Step 2Cut the beetroot into thin slices. Marinate in the dressing. Arrange attractively on a plate.
Step 3Spread horseradish and creamy goat's cheese over it.
Step 4Wash and quarter the figs. Heat a pan with olive oil. Sauté briefly, caramelise with soy sauce.
Step 5Place the grilled figs in the middle of the beetroot carpaccio.
Step 6Season with black pepper and serve immediately.
