Chinese sausage salad
This rich, Chinese sausage salad is a delicious, tangy accompaniment to any Thai meal. It's made by steaming and frying rich Chinese sausages, and then mixing them with a tangy fish sauce and lime juice dressing, pickled mustard and cherry tomatoes.

Ingredients
- 1Chinese sausage (lap cheong)
- 2tbsp of bird's eye chillies, chopped, red and green chillies
- ½tbsp of garlic cloves, chopped
- 1tbsp of cane sugar
- 2tbsp of lime juice
- 2tbsp of Thai fish sauce
- 50g of pickled mustard greens, roughly chopped
- 1banana shallot, peeled and thinly sliced
- 3cherry tomatoes, halved
- 3sprigs of coriander

Step 1
Steam the Chinese sausage for 10 minutes then slice diagonally into slices. Fry the slices until colouredStep 2
In a pestle and mortar pound the chillies and garlic together. Add the sugar, lime juice and fish sauce. This is your dressing, it should be hot, sour and a little sweetStep 3
In a large bowl, add the cooked Chinese sausage, pickled mustard, sliced shallot and cherry tomatoesStep 4
Fold in the dressing until fully combinedStep 5
Arrange on a plate and garnish with coriander
