- 4 tablespoongrainy mustard
- 1unwaxed lemon, grated zest and juice
- 5 tablespoonolive oil
- 2 clove(s)garlic, crushed
- 2unwaxed lemons
- 1 ½ kgpork cutlets (about 8 pieces)
- black pepper
- sea salt
Step 1Mix mustard, lemon zest and juice from the first lemon, olive oil and garlic in a big bowl.
Step 2Add the pork cutlets to the bowl, mix and leave to marinade for an hour.
Step 3After an hour, drain the cutlets and set marinade aside.
Step 4Cut the two remaining lemons in 2cm thick slices.
Step 5Put the cutlets on the barbecue and grill on medium heat for about 40 minutes on all sides, basting every now and then with more of the marinade.
Step 6Char the lemon slices on the barbecue for about 10 minutes, turn once.
Step 7When done, season the cutlets with salt and pepper, rest for a few minutes and serve garnished with the charred lemon slices.
