Sticky BBQ pomegranate molasses wings with dukkah
These BBQ wings are marinated and glazed in a sticky, sweet and sour pomegranate molasses sauce and topped with dukkah to serve.

Ingredients
- 6chicken wings, separated into drums and flats
- 5tbsp ofpomegranate molasses
- 1tbsp ofhoney
- 1tbsp oflemon juice
- 1tbsp of vegetable oil
- ½tspground cumin
- 1tsppul biber chilli flakes
- saltto season
- 1tbsp ofsesame seeds
- 2tspfennel seeds
- 2tspcoriander seeds
- 1tspcumin seeds
- 1tspsea salt flakes
Instructions
Step 1
Combine all the ingredients for the wings except the wings themselves and mix well. Divide in half and use half the marinade to coat the wings. Transfer to the fridge and leave overnight, if possibleStep 2
To cook the wings, light a BBQ for indirect cooking, with the coals arranged either in the centre or off to one sideStep 3
Cook the wings over direct heat but close to the coals for around 30 minutes, brushing regularly with the reserved marinade (move them closer to the coals as they start to burn down)Step 4
Combine all the ingredients for the dukkah and mix wellStep 5
Once the wings are cooked, give them a final brush with the marinade and sprinkle with the dukkah to serve
