Recipe Tip: Moules Frites

- 1 kgmussels
- 1 lfish stock
- 100 gcarrots
- 100 gcelery
- 100 gleek
- 100 gonion
- 2 clove(s)garlic
- 50 gbutter
- 2 tablespoonginger
- 100 mlcider
- 1 tablespoongreen Tabasco
- 1organic lime (juice and grated zest)
- 1 mlolive oil
- 1 mllemon oil
- 1 teaspoon(s)parsley, chopped
- 2 teaspoon(s)tarragon
- 2 teaspoon(s)chervil
- 2 teaspoon(s)ginger
Step 1Clean the mussels under running water and check that all are closed. Do not use opened specimens.
Step 2Finely dice the vegetables and sauté in the butter. Add the mussels and the ginger and let them steam briefly.
Step 3Deglaze with cider and add Tabasco, fish stock and lime and cook for 10 minutes.
Step 4Add the oils and herbs, season with a little fresh pepper if necessary and serve immediately. Serve with french fries and saffron mayonnaise.
