Recipe Tip: Moules Frites

Ingredients
- 1 kgmussels
- 1 lfish stock
- 100 gcarrots
- 100 gcelery
- 100 gleek
- 100 gonion
- 2 clove(s)garlic
- 50 gbutter
- 2 tablespoonginger
- 100 mlcider
- 1 tablespoongreen Tabasco
- 1organic lime (juice and grated zest)
- 1 mlolive oil
- 1 mllemon oil
- 1 teaspoon(s)parsley, chopped
- 2 teaspoon(s)tarragon
- 2 teaspoon(s)chervil
- 2 teaspoon(s)ginger
- pepper
Instructions
Step 1
Clean the mussels under running water and check that all are closed. Do not use opened specimens.Step 2
Finely dice the vegetables and sauté in the butter. Add the mussels and the ginger and let them steam briefly.Step 3
Deglaze with cider and add Tabasco, fish stock and lime and cook for 10 minutes.Step 4
Add the oils and herbs, season with a little fresh pepper if necessary and serve immediately. Serve with french fries and saffron mayonnaise.Step 5
