Crab-Stuffed Mushrooms With Parmesan Cheese
Crab-stuffed mushrooms are very easy to prepare and bake for a party. Your guests and family will love them. Change them up with shrimp, cheese, or meat.
- Serves: 18 persons
- 1pound large mushrooms
- 6tablespoons butter (divided)
- 3green onions (minced)
- 3to 4 tablespoons minced red bell pepper
- 4ounces crabmeat
- 1cup fresh fine bread crumbs
- ¼teaspoon Cajun seasoning (or Creole seasoning blend)
- ⅛teaspoon freshly ground black pepper
- ¼teaspoon salt (or to taste)
- 2tablespoons Parmesan cheese
Step 1Gather the ingredients.
Step 2Heat the oven to 350 F. Spray a shallow baking dish (about 8-inch square, or one which will fit mushrooms in one layer) with nonstick cooking spray, line with parchment paper, or grease the pan with butter.
Step 3Wash and trim the end of stems from mushrooms. Pop remaining stem out. Chop stems finely and set them aside.
Step 4Melt 2 tablespoons of the butter in a medium saucepan. Once melted, brush the melted butter over mushroom caps.
Step 5Melt the remaining butter in the saucepan over medium heat. When the butter is hot add the reserved chopped stems, minced green onions, and red bell pepper. Cook for 3 to 5 minutes, or until the vegetables are tender.
Step 6Combine the onion and butter mixture with the bread crumbs, crabmeat, Cajun seasoning, and pepper. Taste and add salt, as needed.
Step 7Fill the mushrooms, mounding the stuffing in each cap.
Step 8Sprinkle each filled mushroom cap with a little Parmesan cheese, if desired.
Step 9Bake for 15 to 20 minutes, until the crab stuffing is hot and mushroom caps are tender. Serve them hot. To keep them warm for a lengthy serving, use a warming tray, chafing dish, or slow cooker.
