Handed down from my mother. This is a great salad for onion lovers and even those who don't care much for onions. I always get requests for this recipe. I prefer served at room temperature, but it holds well in the fridge a couple of days. Goes with any meal.
- Serves: 10 persons
- ½cup white vinegar
- ½cup water
- ¾cup white sugar
- 6Spanish onions, thinly sliced
- ¾cup mayonnaise
- 1tablespoon celery seed
- salt and ground black pepper to taste
Step 1Combine vinegar and water in a large bowl. Whisk sugar into the vinegar mixture until dissolved. Add onion slices and marinate at least 3 hours; drain.
Step 2Whisk mayonnaise, celery seed, salt, and pepper together in a separate bowl; add to drained onion slices and fold to coat. Marinate at least 2 hours before serving.
