Allergy-Friendly Scrumptious Waffles
Gluten-free, dairy-free, and egg-free, these delicious waffles make a hearty breakfast. They've got a nice crisp on the edges and a good chew to the inside. If desired, sprinkle confectioners' sugar over the waffles. To add a pop of color and flavor, cut berries and/or other fruit and place on top of waffles. If you'd like more sweetness, pour your choice of syrup on top. Enjoy!

- 2cups gluten-free all-purpose baking flour
- 2tablespoons white sugar
- 2teaspoons baking soda
- 1teaspoon salt
- 4teaspoons molasses
- 1½ cups warm water
- ¼cup coconut oil, melted
- 2tablespoons apple cider vinegar
- 1teaspoon vanilla extract
- ½cup dairy-free dark chocolate chips
Step 1Combine flour, sugar, baking soda, and soda in a large mixing bowl. Pour in molasses and stir until partially incorporated.
Step 2Combine water, coconut oil, vinegar, and vanilla extract in a medium mixing bowl.
Step 3Preheat waffle iron on medium according to manufacturers' instructions. Grease both sides of the waffle iron.
Step 4Pour water mixture over flour mixture and stir thoroughly. Add chocolate chips. Ladle 1/4 cup batter into the waffle iron. Close and cook until browned on the outside, 2 to 3 minutes per waffle. Take out each waffle with a fork and place on a serving platter.
