Honey-Roasted Red Potatoes
Drizzled with honey, butter, and dry mustard, these quick and easy roasted red potatoes might just be your new favorite side dish.

- 1pound red new potatoes, quartered
- ¼cup diced onion
- 2tablespoons butter, melted
- 1tablespoon honey
- 1teaspoon dry mustard
- salt and ground black pepper to taste
- 8sprigs fresh parsley
Step 1Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking pan.
Step 2Spread potatoes in a single layer in the baking pan and top with onion. Stir together melted butter, honey, dry mustard, salt, black pepper in a bowl. Drizzle mixture over potatoes; toss to coat.
Step 3Roast in the preheated oven, stirring halfway through, until tender, about 35 minutes. Garnish with parsley sprigs.
