Serve this richly flavored mushroom gravy over steaks, meatloaf, or roast chicken for a delicious meal. Made with mushrooms, beef broth, and spices.

- ¼cup unsalted butter
- 1pound white button mushrooms (or cremini mushrooms, cleaned and sliced)
- ⅓cup all-purpose flour
- 4cups beef broth (or chicken or vegetable broth, chilled)
- ½teaspoon dried thyme
- Salt (to taste)
- Freshly ground black pepper (to taste)
Step 1Gather the ingredients.
Step 2Melt the butter in a large saucepan over medium-high heat.
Step 3When the butter starts to sizzle, add the mushrooms and cook, stirring for 10 minutes, or until the mushroom juices have evaporated and they begin to brown.
Step 4Stir in the flour, reduce the heat to medium, and cook for another 5 minutes.
Step 5Whisk in 1 cup of the cold broth.
Step 6Once incorporated, pour in the rest of the broth and add the thyme.
Step 7Bring back to a simmer, reduce the heat to low, and simmer gently for 30 minutes, stirring occasionally.
Step 8Season with salt and fresh ground black pepper to taste.
