Gluten-Free Vegan Banana Bread Muffins
Make dairy-free, egg-free banana muffins that are not only vegan but also gluten-free and delicious. Feel free to add additions, like fruit or nuts.

Ingredients
- 2cups gluten-free flour mix (store-bought, or homemade)
- 1cup vegan sugar
- 1teaspoon baking powder
- 1teaspoon baking soda
- ½teaspoon cinnamon
- ¼teaspoon salt
- The equivalent of 3 eggs egg replacer (or mix 3 tablespoons flax meal with 4 tablespoons warm water)
- 1 ⅓cup mashed bananas (about 3 to 4 medium)
- ½cup canola oil
- ½cup almonds (sliced)

Gather the ingredients.Step 2
Preheat the oven to 350 F. Lightly oil a standard 12-cup muffin tray and set aside.Step 3
Mix all ingredients in a large bowl.Step 4
Using a standard ice cream scoop or melon baller, scoop the batter into each of the 12 muffin cups. (If you do not have an ice cream scoop or melon baller, use a 1/4 cup measuring cup instead.)Step 5
Bake for 18 to 20 minutes, or until the muffins spring back slightly when touched.Step 6
Allow the muffins to cool in the pan on a wire cooling rack for 30 minutes.Step 7
Remove from the pan and allow the muffins to cool on the cooling rack.
