Lemon and Herb Roasted Chicken
Roast chicken is one of the easiest dinners to prepare, and this recipe is a great choice. The chicken is roasted with a butter, lemon, and herb rub.

Ingredients
- 1roasting chicken , about 4 to 5 pounds
- Juice of 1/2 lemon
- Salt and pepper to taste
- 1small onion, peeled and quartered
- 1rib celery, cut into large chunks
- Few sprigs fresh parsley
- 4tablespoons melted butter
- 3tablespoons coarsely chopped fresh parsley
- ¼teaspoon dried rosemary, crumbled
- ½teaspoon dried leaf thyme

Gather the ingredients.Step 2
Preheat oven to 350 F/180 C/Gas 4. Rub inside of the chicken with lemon juice ; sprinkle with salt and pepper.Step 3
Add the onion quarters, celery, and a few sprigs of fresh parsley to chicken cavity.Step 4
Combine the melted butter with the chopped parsley, rosemary, and thyme.Step 5
Brush some of the butter mixture over the chicken.Step 6
Place chicken in a shallow roasting pan and roast for about 20 minutes per pound. For a 4- to 5-pound chicken, it's 80 to 100 minutes, and the internal temperature should register at least 165 F on a meat thermometer inserted into the meaty part of the thigh away from the bone.Step 7
Baste with the remaining melted butter and herb mixture several times.Step 8
