Oat Pudding with Mango and Coconut
A super healthy summer dessert!
- Serves: 2 persons
- 4cups water
- 1cup steel cut oats
- 1pinch salt
- ½cup cashew milk
- ½banana, chilled
- 1mango, diced
- ½cup coconut flakes
- 2teaspoons raw honey
Step 1Bring lightly salted water to boil in a pot. Stir oats into boiling water and reduce heat to medium-low. Cook and stir until oats soften and water is absorbed, about 15 minutes. Remove from heat and allow to cool, about 15 minutes.
Step 2Blend oats, cashew milk, and banana in a blender until smooth.
Step 3Spoon oat mixture into 2 bowls; top each with diced mango, coconut flakes, and honey.
