Easy Lemon Curd Bars

Ingredients
- ½cup unsalted butter (softened)
- ½cup granulated sugar
- 1 ¼cups all-purpose flour
- ¼teaspoon baking soda
- ¼teaspoon salt
- 1jar (10 ounces) prepared lemon curd
- ½cup sweetened shredded coconut
- ¼cup slivered almonds
- Powdered sugar, for dusting (optional)
Instructions
Step 1
Gather the ingredients. Preheat oven to 350 F.Step 2
Lightly coat an 8x8 inch baking pan with non-stick cooking spray. Set aside.Step 3
In a large bowl, cream the butter and sugar until light and fluffy.Step 4
In another bowl combine the flour, baking soda, and salt.Step 5
Gradually add the flour mixture to the creamed butter mixture and mix well.Step 6
Set aside 1/2 cup of the dough mixture for the topping. Press the remaining into the bottom of the prepared baking dish.Step 7
Bake for 10 minutes or until the edges are lightly browned.Step 8
Cool on a wire rack for 10 minutes.Step 9
Spoon the lemon curd over the cooled crust.Step 10
In a small bowl combine the coconut, almonds, and reserved dough mixture.Step 11
Sprinkle over the lemon curd. Bake for 15 minutes. You will know the lemon bars are done when the topping is a golden brown color.Step 12
Cool completely on a wire rack.Step 13
Dust with powdered sugar, if desired.Step 14
Cut into bars to serve.
