- For the Pork:
- 2cups warm water
- ½cup kosher salt
- ½cup brown sugar
- 4cloves garlic, roughly chopped
- 2tablespoons whole black pepper
- 1onion, cut into quarters
- 3jalapeños, roughly chopped
- ½cup soy sauce
- ⅓cup fish sauce
- 3pound pork shoulder, trimmed
- For the Sandwich:
- 1French baguette
- ⅓cup pâté, store-bought or homemade
- 2tablespoons mayonnaise
- 8ounces roast pork, sliced 1/4 inch thick
- ½cup pickled carrot and radish mixture (regular red radish or daikon)
- 1jalapeno pepper, thinly sliced, seeds removed
- ⅓cup sliced cucumber
- 1small bunch cilantro
