Veggie BLT (bagel, lettuce & tomato)
Make an easy, speedy veggie sandwich with soft cheese and pesto, avocado and tomato sandwiched between two bagel halves. It takes just five minutes to make
- Serves: 2 persons
- 1large tomato, sliced
- 2tsp olive oil
- 1tsp red wine vinegar
- 50g soft cheese
- 1tbsp pesto (ensure vegetarian, if needed)
- 2bagels (seeded or plain), split
- ½avocado, peeled, stoned and sliced
- 2small handfuls of watercress
Step 1Lay the tomato slices on a plate, season with salt and drizzle with the oil and vinegar. Set aside for a few minutes until the tomato juices have been drawn out (reserve this juice on the plate). Mix the soft cheese and pesto together in a bowl.
Step 2Toast the bagels, then spread the cut sides with the soft cheese mix. Top with the tomato and avocado slices. Dress the watercress in the tomato juice, then pile on top and sandwich with the bagel tops. Press down lightly and serve.
