Lemon-Blueberry Pancakes

Ingredients
- 1 ¼cups all-purpose flour
- 1tablespoon baking powder
- 1teaspoon white sugar
- ½teaspoon salt
- 1cup milk
- 1egg
- ½tablespoon butter, melted and slightly cooled
- 1lemon, zested
- 2teaspoons oil, or as needed
- 1cup frozen blueberries, or as needed, thawed

Sift together flour, baking powder, sugar, and salt in a large bowl.Step 2
Whisk milk and egg together in a small bowl; whisk into flour mixture until blended. Stir in melted butter and lemon zest.Step 3
Heat a lightly oiled griddle over medium-high heat. Drop batter by 1/4 cupfuls onto the griddle; drop a few blueberries on top, then cover each with a little more batter. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
