Keto Vanilla Cupcakes
If you’re following a keto diet, you’ll want to treat yourself to this moist, fluffy cupcake for a sweet treat without the sugar and carb count.

- 2cups almond flour
- ¼cup plus 1 one tablespoon coconut flour, sifted
- ¾cup granulated keto sweetener
- 1teaspoon baking powder
- ½teaspoon baking soda
- ¼teaspoon salt
- ½cup sour cream
- ⅓cup neutral oil or melted butter
- ¼cup unsweetened non dairy milk
- 1teaspoon vanilla extract
- 1cup keto frosting
Step 1Gather the ingredients.
Step 2Preheat the oven to 350 F. Line or grease a 12-cup muffin pan.
Step 3In a large mixing bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
Step 4Make a well in the center of the dry ingredients, then add the eggs, sour cream, oil or butter, milk, and vanilla. Whisk the liquid ingredients together in the center first, then stir everything together with a wooden spoon until thoroughly combined.
Step 5Divide the cupcake batter among the twelve cups of the prepared muffin pan.
Step 6Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Let cool for 5 to 10 minutes before removing from the pan.
