Laotian Sticky Rice With Durian (Khao Niao Thu Lien)
If you love durians, you will love this Laotian dessert. If you find durians too pungent to try, you may be pleasantly surprised.
- Serves: 2 persons
- 1cup sticky rice (or glutinous rice)
- 2cups fresh coconut milk , divided
- 1cup mashed durian flesh
- 2tablespoons sugar, or to taste
Step 1Gather the ingredients.
Step 2Wash and rinse the sticky rice with water. Drain in a colander .
Step 3In a bowl, steam the sticky rice with 1 cup of coconut milk on high heat for 45 minutes.
Step 4Let it cool down. Separate the sticky rice into 2 serving bowls.
Step 5In another bowl, add sugar to the durian flesh and mix well. I recommend about 2 tablespoons of sugar for this recipe, although you may cut down on the sugar according to your taste or for health purposes.
Step 6Divide the durian mixture into 2 portions and pour over the steamed rice.
Step 7Add 1/2 cup of fresh coconut milk into each serving bowl.
Step 8Serve and enjoy.
