Steak fajitas with red peppers & couscous
Make this midweek meal with couscous, steak and red peppers in under 20 minutes. Top with a generous dollop of soured cream and add a squeeze of lime

Ingredients
- 300g lean beef steak, sliced into thick strips
- 2red peppers, deseeded and thickly sliced
- 2garlic cloves, finely grated
- 1tbsp vegetable oil
- 1tsp hot chilli powder
- 1tsp ground cumin
- 175g couscous
- 400ml hot vegetable stock
- small handful coriander leaves, roughly chopped
- 60g soured cream, to serve
- lime wedges, to serve
- hot sauce, to serve (optional)
Instructions
Step 1
Combine the steak with the peppers, garlic, oil, spices and some seasoning. Place the couscous and stock in the bottom of the Ninja Speedi pot. Pull out the legs on the crisper tray and place over the couscous. Pour the steak mixture onto the crisper tray in a single layer.Step 2
Close the lid, switch the SmartSwitch to ‘Rapid Cooker’ and set to ‘Speedi Meals’. Set the temperature to 190C and the timer for 5 mins. The pre-heat will start, and once that ends, the timer will start. The steak should be just cooked through and the couscous tender, having absorbed all the liquid. Cook for an extra 2-3 mins, if needed.Step 3
Remove the steak mixture and toss with the coriander. Fluff up the couscous with a fork, season lightly and serve with the steak, with a dollop of soured cream, lime wedges to squeeze over, and a drizzle of hot sauce, if you like.
