Chocolate Espresso Banana Muffins

Ingredients
- ½cup unsalted butter, melted
- 1cup brown sugar
- 2large eggs eggs
- 3each ripe bananas
- 1½ cups all-purpose flour
- 1cup oat flour
- 2tablespoons unsweetened cocoa powder
- 2tablespoons instant espresso powder
- 1tablespoon ground cinnamon
- 1teaspoon salt
- ½teaspoon baking soda
Instructions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.Step 2
Pour melted butter into the bowl of an electric mixer and add brown sugar, eggs, and bananas. Mix until combined. Mix in all-purpose flour, oat flour, cocoa, espresso, cinnamon, salt, and baking soda until combined.Step 3
Spoon batter evenly into the prepared muffin cups.Step 4
Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.
