Chocolate Espresso Banana Muffins
Really the title says it all.
- Serves: 18 persons
- ½cup unsalted butter, melted
- 1cup brown sugar
- 2large eggs eggs
- 3each ripe bananas
- 1½ cups all-purpose flour
- 1cup oat flour
- 2tablespoons unsweetened cocoa powder
- 2tablespoons instant espresso powder
- 1tablespoon ground cinnamon
- 1teaspoon salt
- ½teaspoon baking soda
Step 1Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
Step 2Pour melted butter into the bowl of an electric mixer and add brown sugar, eggs, and bananas. Mix until combined. Mix in all-purpose flour, oat flour, cocoa, espresso, cinnamon, salt, and baking soda until combined.
Step 3Spoon batter evenly into the prepared muffin cups.
Step 4Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.
