Gluten-Free Vanilla Wafers
Gluten-free vanilla wafers are easy to make and buttery delicious and this simple recipe calls for basic ingredients.

- 2large eggs
- ⅔cup granulated sugar, plus 2 tablespoons for pressing cookies
- 1 ½teaspoons vanilla extract
- 1teaspoon grated fresh lemon peel
- 1pinch salt
- 1cup gluten-free all-purpose flour, with xanthan or guar gum in the mix
- 10tablespoons (5 ounces) unsalted butter, melted and cooled
Step 1Gather the ingredients.
Step 2Preheat the oven to 375 F / 190 C.
Step 3Line 2 large baking sheets with parchment paper, silicone pads, or lightly grease.
Step 4Combine eggs and sugar in a large mixing bowl and beat on high until creamy, about 3 minutes; add vanilla, lemon peel, and salt and beat to combine. Gradually add gluten-free flour and beat just until combined. Slowly drizzle melted butter into the mixture and beat until combined.
Step 5Drop dough by heaping rounded teaspoons onto prepared baking sheets, leaving about 1 1/2-inch space between cookies. Dip a small drinking glass in the sugar and gently press down on each cookie.
Step 6Bake in preheated oven for about 12 to 15 minutes or until the cookies are golden brown and crispy. Cool on a wire rack.
