Oyster Fritters Recipe
These delicious oyster fritters are covered in a thick batter then fried. Serve them with tartar sauce or cocktail sauce as a snack or appetizer.

Ingredients
- 4cups vegetable oil
 - 2eggs (slightly beaten )
 - 1cup milk
 - 2cups flour, 10 ounces ( dip and sweep )
 - 2teaspoons baking powder
 - ½teaspoon salt
 - 1 ½cups oysters (drained and chopped)

Gather the ingredients.Step 2
Heat about 1 to 2 inches of oil in a deep heavy skillet to about 365 F.Step 3
Whisk the eggs and milk together in a small bowl.Step 4
Combine the flour, baking powder, and salt in another bowl, and blend well. Add the egg and milk mixture, and blend with a spoon until smooth.Step 5
Stir the chopped oysters into the batter, and drop by spoonful into the hot fat. A cookie scoop works well to keep them small and round.Step 6
Cook in batches, turning to brown both sides. Drain on paper towels.Step 7
