Vegan Double Chocolate Chunk Cookies
These double chocolate chunk cookies are completely vegan, egg-free, dairy-free and absolutely delicious. You can also use regular chocolate chips.
- Serves: 12 persons
- 2cups all-purpose flour
- ⅔cup cocoa
- 1teaspoon baking soda
- ½teaspoon salt
- ⅔cup vegetable oil
- 1 ¼cup sugar
- Egg replacer for 1 egg (prepared according to package instructions)
- ½cup soy milk
- 1teaspoon vanilla
- ½cup vegan chocolate chunks
Step 1Gather the ingredients and preheat oven to 350 F.
Step 2Combine the flour, cocoa, baking soda, and salt in a small bowl.
Step 3In a separate large bowl, whisk together the sugar and vegetable oil until well mixed, then add the prepared egg replacer, soy milk, and vanilla.
Step 4Add flour mixture to sugar and oil mixture, mixing just until well combined.
Step 5Stir in the vegan chocolate chunks.
Step 6Drop the dough by generous spoonfuls onto a cookie sheet, then gently flatten.
Step 7Bake for 8 to 10 minutes, until done, being careful not to over-bake.
