Leftover Thanksgiving Turkey Pizza
Use your Thanksgiving turkey leftovers in a unique way by throwing them on a pizza and covering it with cheese and crispy bacon.
- Serves: 4 persons
- For the Pizza Dough
- 1cup water (lukewarm)
- 1 ½teaspoons active dry yeast
- 1teaspoon salt
- 1teaspoon sugar
- 1tablespoon olive oil
- 3cups flour
- For the Toppings
- 6strips bacon
- ¼cup sour cream
- 1cup leftover mashed potatoes
- ½cup leftover turkey breast (cut into small pieces)
- ½cup mild cheddar cheese
- ½cup Monterey Jack cheese
- ¼cup scallions (chopped)
Step 1Gather the ingredients.
Step 2In a large measuring cup, stir together the water, yeast, salt, sugar, and olive oil. Let it sit for about 10 minutes. You should see the yeast start to bubble and grow.
Step 3Place the yeast mixture in a large bowl or the bowl of a stand mixer. Gradually add the flour, stirring or using the dough hook attachment until the flour is completely combined and the dough forms a ball.
Step 4Add olive oil to the sides of the bowl and cover with a towel. Place in a warm area or just on the counter and allow it to rise for one hour.
Step 5Preheat the oven to 425 F.
Step 6Fry or bake the bacon until crispy. Chop the bacon into a small dice.
Step 7Punch down the dough and roll into into a soft ball.
Step 8Place the dough on a large sheet of parchment paper, lightly grease your hands with oil, and push and flatten the dough to form the crust.
Step 9Once it is thin enough (about 1/8-inch thick), spread the sour cream over the crust.
Step 10Spread the leftover mashed potatoes over the sour cream.
Step 11Sprinkle the two cheeses over the top of the potatoes.
Step 12Top with the leftover turkey and bacon.
Step 13Bake on the bottom rack of the oven for about 15 to 20 minutes, or until golden and crispy.
Step 14Serve and enjoy!
