French Green Vegetable au Gratin

Ingredients
- 1small onion, finely chopped
- 1tablespoon olive oil
- 2tablespoons all-purpose flour
- 1 ½cups whole milk
- ¾teaspoon salt
- ½teaspoon poultry seasoning
- ¼teaspoon freshly ground black pepper
- 1pound broccoli, chopped
- 1pound zucchini, chopped
- 2cups leaf spinach, chopped
- 1 ½cups shredded Cantal cheese, or cheddar cheese
- 1cup dry breadcrumbs
- ¼cup shredded Parmesan cheese
- 3tablespoons butter, melted

Preheat the oven to 375 F and butter a large gratin dish.Step 3
In a medium saucepan over medium heat, gently sauté the onion in the olive oil for 5 minutes. Sprinkle the flour over the onion and continue sautéing the mixture for 30 seconds.Step 4
Add the milk, salt, poultry seasoning, and pepper to the pan and stir constantly for 3 to 5 minutes until the sauce thickens.Step 5
Stir the prepared broccoli, zucchini, spinach, and Cantal or cheddar cheese into the sauce and bring the mixture to just a simmer. Turn it out into the buttered gratin dish.Step 6
Stir together the breadcrumbs, Parmesan cheese, and melted butter and sprinkle the buttered breadcrumbs over the gratin.Step 7
Bake the vegetable gratin in the preheated oven for 30 to 40 minutes, until it is hot and bubbly, the vegetables are tender, and the breadcrumbs have turned golden brown.
