Courgette fritters
Use grated courgette to make a simple but delicious summery starter or light supper with just five main ingredients. Use up a glut from the garden

Ingredients
- 250g courgettes, grated
- 20g plain flour
- 1egg, beaten
- 25g finely grated parmesan, or vegetarian alternative (optional)
- 1tbsp olive oil
- 170g tub roasted red pepper hummus, to serve
Instructions
Step 1
Combine the grated courgette, flour, egg and parmesan in a large bowl.Step 2
Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper hummus.
