Roasted Whole Duck
Roast duck is a bit of an effort to make but well worth it. This recipe will make a versatile stock as well as a roasted duck.

- For Simmering:
- 6- to 6-pound duck
- 1large yellow onion (peeled, trimmed, and quartered)
- 2large carrots (cut into 1-inch pieces)
- 2medium stalks of celery (cut into 1-inch pieces)
- large handful of flat-leaf parsley (with stems)
- 2bay leaves
- 12peppercorns
- For Roasting:
- 2tablespoons dried orange zest
- 2teaspoons salt
- 1teaspoon ground black pepper
- 2teaspoons dried, ground rosemary
- 1orange (washed and cut into eight pieces)
- 1small onion (peeled, trimmed and quartered)
