Chickpea Cookie Dough
This recipe for chickpea cookie dough is a gluten-free, fun, and safe way to enjoy a taste of raw cookie dough.

- Cookie Dough:
- 1(15-ounce) can chickpeas, drained and well rinsed
- ⅓cup brown sugar
- ¼cup peanut butter
- 3tablespoons ground flaxseed meal
- 2teaspoons vanilla extract
- ¼teaspoon salt
- ⅓cup chocolate chips
- Graham crackers
- Pretzel sticks
- Sliced apples
Step 1Gather the ingredients.
Step 2In the bowl of a food processor combine the chickpeas, brown sugar, peanut butter, ground flaxseed meal, vanilla extract, and salt. Pulse to combine.
Step 3Process until a thick, even dough forms, scraping the sides of your device as necessary.
Step 4Transfer the dough into a large bowl and fold in the chocolate chips.
Step 5Cover and refrigerate for at least 30 minutes. The dough will thicken as it chills because the flaxseed meal will absorb some of the moisture from the chickpeas as it sits. This will help the mixture achieve the consistency of raw, edible cookie dough.
Step 6Simply enjoy the cookie dough on its own or as a dip using your favorite foods as dippers. Pretzel sticks, graham crackers, and sliced apple all work well and taste great.
