Gluten-Free Caramel Corn
Gluten-free caramel corn is a perfect treat for little gluten-free goblins. Try this buttery, crunchy, sweet recipe for homemade caramel corn.
- Serves: 20 persons
- 5quarts popcorn (freshly popped)
- ½cup agave syrup (or light corn syrup)
- 2cups brown sugar
- 1cup butter
- ¼teaspoon cream of tartar
- 1teaspoon vanilla extract
- 1teaspoon baking soda
Step 1Preheat oven to 250 F.
Step 2Pop 5 quarts of popcorn and place in a large roasting pan.
Step 3Put butter, sugar, agave syrup (or corn syrup) and cream of tartar in a large pan. Over medium heat, melt the mixture, stirring to prevent burning.
Step 4Bring to a boil and cook for 5 minutes, stirring occasionally. Remove from heat.
Step 5Add vanilla and baking soda and stir to mix.
Step 6Carefully pour this mixture over the popcorn. Gently stir to coat the popcorn thoroughly.
Step 7Bake for 1 hour, stirring every 15 minutes.
Step 8Remove and pour on a large baking sheet to cool. Use a spatula to separate the warm clumps. Reminder: Always make sure your work surfaces, utensils, pans, and tools are free of gluten.
