Stuffed Baked Potatoes
These baked stuffed potatoes with sour cream and Monterey jack cheese and butter are easy to make, and a great side dish for almost any meal.

Ingredients
- 4large baking potatoes (about 2 pounds)
- 4tablespoons butter or margarine (softened)
- ¾cup sour cream
- ¾teaspoon salt
- ¼teaspoon freshly ground black pepper or white pepper
- ½cup shredded cheddar or Monterey Jack
- 1to 2 teaspoons paprika (to taste)
Instructions
Step 1
Gather the ingredients. Preheat the oven to 350 F.Step 2
Scrub the potatoes and pat them dry.Step 3
Prick the potatoes in several places with a fork.Step 4
Bake the potatoes for 45 to 50 minutes or until cooked through and tender. Remove from the oven and allow to cool.Step 5
Increase the oven temperature to 425 F. Cut each potato in half lengthwise.Step 6
While keeping the shells intact, scoop out the potato pulp, placing it into a large bowl.Step 7
Mash the potatoes or put them through a ricer .Step 8
Beat in the butter, sour cream, and salt and pepper.Step 9
Spoon the potato mixture back into only 6 of the shells.Step 10
Top each potato half with some of the shredded cheese and then sprinkle with paprika. Bake for about 15 minutes or until the cheese has melted and the potatoes are heated through.Step 11
Serve hot and enjoy.
